Our History
Welcome to Grey Matter Distillery, Jacksonville’s very first craft distillery! Founded in 2014, we’re excited to open our doors to the public for tours, tastings, and beverages in our new Atlantic Beach, FL home. Grey Matter is the mother brand of two Florida favorites, Carve Craft Vodka and Live Oak Whiskey, both of which are distilled on-site.
Tours
Come explore our intimate distillery, check out the stills and barrels where all the magic happens and top-quality spirits are created, and explore our brand-new space covered in local art and tons of charm. Tours are held by appointment only and you will get the opportunity to learn how the magic happens and even try a free sample or 2. We can’t wait to show you around!

Sonically enhanced whiskey and a fave craft vodka are here
The term “grey matter“ is usually in reference to those parts of the brain that keep our bodies moving, our memories intact and our emotions under — or out of — control.
In Atlantic Beach, however, Grey Matter is another matter altogether. It’s a craft distillery — the first one in Duval County — generating Carve Craft Vodka and Live Oak Whiskey to satisfy that hankering for quality spirits FirstCoasters have. And folks can enjoy not only the elixirs pouring at Grey Matter, but they can also take a tour (by appointment only) to observe first-hand the inner workings of the distillery. A free sample is a tour perk.
The building itself is deceptively smallish from Mayport Road, but once inside, you’ll see the stills (not quite the copper kettles and funnels of yesteryear) and the barrels and the requisite production gear that goes with them.
Another bonus from Grey Matter is its availability as an event space for gatherings. Just email Paul Grey, the owner and the pro churning out the libations. He’s developed a distinctive method for aging his whiskey sonically. It’s distilled the old-fashioned way, put in an oak-chip-filled stainless steel container that ages the blend while a sustained low-frequency tone thrums through the liquid as it’s being infused with the oak chips. Increasing the confluence of the whiskey mash (rye, barley, corn, and oats) and wood speeds up the aging process so we can enjoy it sooner!
